Shrimp Recipes – Jamaican Shrimps and Savory Potatoes

2oz butter
1 medium onion
1 can condensed tomato soup
6 oz frozen shelled shrimp (make sure they are defrosted)
1 green pepper

pinch cayenne pepper
pinch powdered cinnamon
To Garnish:

1) Heat the butter in a large frying pan.
2) Peel and grate the onion and toss in the hot butter for approximately 5 minutes until tender but not brown.
3) Add the tomato soup and stir into the onion mixture.
4) Add all the rest of the ingredients, cutting the pepper into thin strips and putting some on one side for garnish.
5) Simmer gently for about 5 minutes, put into a hot serving dish and top with the pepper strips kept for garnish.

Jamaican Fish: use fingers of white fish or smoked haddock and simmer in the sauce at stage 5, for 10 to 20 minutes. Be sparing with salt if using haddock.
Savory Potatoes:
Buy a packet of dehydrated potatoes for 4 helpings, and heat as instructed on the packet. When the potatoes are smooth, add a good knob of butter or margarine, a shake of garlic salkt, a little finely chopped parsley. Pile into a dish and top with paprika.
